Cabbage Slaw with Creamy Lemon Dressing

Cabbage Slaw with Creamy Lemon Dressing

Ingredients

  • 4-6 cups Green or purple cabbage
  • Fresh herbs (optional)
  • 1/2 cup Mayonnaise or yogurt
  • 2-3 tbsp Lemon juice or apple cider vinegar
  • 1 tbsp Honey
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 tsp Garlic powder
  • 1/2 tsp Red chile flakes

Instructions

  • Add all of your sliced vegetables to a large bowl.
  • Pour in about half of the dressing and toss well.
  • Use your hands to gently massage the slaw for a minute or two to soften the vegetables.
  • Taste and add more dressing as needed.
  • Finish with toasted pepitas, walnuts, or sunflower seeds for even more crunch.
