You’ll hear from NM Fungi owner\, Estavan\, about why mushrooms are nutrient-dense and great for the planet! \nYou’ll learn basics techniques for cooking mushrooms\, what to pair mushrooms with\, and how to choose and store mushrooms. We make sure that the meals are balanced and that you leave the class feeling satisfied and full. \nThe farm anticipates having long beans\, peppers\, tomatoes\, eggplants\, apples\, and goat milk – so we guarantee it will be a tasty meal. \n  \nMore about Farm Shark:\nZoey and Carlos (and their son Otis) are the forces behind Farm Shark. They grow diversified vegetables on three different plots in Albuquerque’s South Valley\, and focus their garlic production at Carlos’s moms farm in Polvadera\, NM. For this class\, you have the option to start the morning with a lovely yoga class on the farm! \n  \nWhat we’ll be cookin:\n\nBlue corn pancakes – we’ll use farmer Lorenzo’s roasted and fragrant blue corn flour to make truly delicious pancakes. Pancakes can be made vegan and/or gluten free!\nBlackberry compote – it’s the season for farm-fresh\, juicy blackberries! You’ll get a chance to pick berries and then cook them down to a sweet compote sauce.\nLocal coffee & kombucha will be available when you arrive at the farm\n\n  \nMore about Cornelio Candelaria Organics:\nThis historic farm is led by Lorenzo Candelaria\, a 7th generation\, Hispanic\, Native American\, farmer. Lorenzo is local-farm icon\, as he loves to impart his teachings of sustainability and mindfulness to everyone who visits his farm. His words of wisdom include “they grow many crops on the farm\, but harvest only one thing: consciousness”. We’ll start with a tour of Reunity\, a beautiful farm in Santa Fe practicing organic and regenerative agriculture. Next\, Sprouting Kitchen’s founder and owner Fallon Bader will lead us in cooking a meal entirely focused on just-harvested farm produce. You’ll learn new ways of using seasonal produce and new culinary techniques! Then we’ll sit down to share the food we’ve all created together. We can’t wait! \nCost is $70 per person (plus Eventbrite handling fee). Attendance is limited to 30 people. DESCRIPTION:What the experience includes:\nOur cooking classes are a one-of-a-kind experience. You’ll be cooking a meal all focused on the farm’s produce we are visiting. We bring all the equipment to have a fully functioning kitchen on a farm! \n  \nWhat we’ll be cookin:\nThis class is all about mushrooms! Mushrooms have a whole slew of health benefits\, from being anti-oxidant rich\, immune-boosting\, to potentially protecting against dementia. You’ll hear from NM Fungi owner\, Estavan\, about why mushrooms are nutrient-dense and great for the planet! \nYou’ll learn basics techniques for cooking mushrooms\, what to pair mushrooms with\, and how to choose and store mushrooms. DESCRIPTION:A Virtual Cooking Class Like We’ve Never Hosted Before!\n \nFor this cooking class\, you’ll have the opportunity to cook with some very special New Mexican blue corn flour\, from local farmer\, Lorenzo Candelaria’s Fall 2021 harvest! Lorenzo is a 7th generation Native farmer in the South Valley\, and a steward of seed saving. He has collected blue corn seeds from different Indigenous pueblos around New Mexico and planted them in his South Valley farm\, to create a drought-resistant crop that thrives in our dry\, high-desert environment. His unique blue corn seeds also carry the history & stories of the people who have shared their seeds with him. Read an interview with Lorenzo here. \nSeed Sovereignty is the right of a farmer to save\, use\, exchange\, and sell their own seeds. When farmers save seeds\, they can plant them next season or share them with other growers. These seeds become strong\, resilient\, and flourish in challenging environments – which is increasingly more important as climate change becomes more of threat. Large agricultural companies have begun to claim ownership over seeds\, which threatens Indigenous communities’ from saving seeds that have been around for centuries. \nBlue corn has been grown in the South West for 100s of years and continues to be a meaningful cultural food. Every season Lorenzo completes the lengthy process of hulling\, roasting\, and grinding his blue corn into flour. The end result is a creamy\, soft flour that smells enticingly sweet and roasty. \nBy participating in this class\, you are support the movement to protect Indigenous seeds and culture. It makes the most of some crusty bread and peak-summer juicy tomatoes. We’ll make a vinaigrette with the tomato juice\, olive oil\, vinegar\, shallots\, and garlic that the crusty bread will soak up. We’ll saute eggplant until soft and almost creamy\, and char some peppers. All of the produce will be from Chispas farm! \nWe’ll also fry up some farm fresh eggs\, cook up some tasty beans\, and will have local coffee & tea. \n*The recipe can be made gluten and dairy free as needed. \n  \nMore about Chispas Farm:\nChispas farms is a four acre-farm\, where they practice regenerative agriculture and grow a biodiverse variety of crops. We bring all the equipment to have a fully functioning kitchen on a farm! \nThis class will be unique\, as you can drop into the class anytime from 8am – 12 noon! Once you arrive\, you’ll sign in\, grab some local coffee or tea\, and meet Fallon from the Sprouting Kitchen and farmer Lorenzo. Then you’ll get to pick some delicious blackberries from the farm (which are currently bursting with abundance!!). Next you’ll get cooking\, and we’ll be making a blackberry compote and blue corn pancakes. Lastly\, you can enjoy your pancakes and compote with a beautiful farm view! \nAdults can chose to pay $20\, $25\, or $30 dollars\, with kids (under 15) eating for free! You’ll follow a few different recipes that all focus on the seasonal produce from the farm. You’ll learn skills for building a meal based on what ingredients are seasonal. \nWe finalize our menu the week of the class (it’s truly very seasonal) but we will let you know what we’re cooking a few days before the class via email to get you excited! DESCRIPTION:In Collaboration with Polk’s Folly Farm Butcher Shop & Farm Stand! \nPolk’s Folly Farmstand is small\, family run local food shop offering humanely raised meats\, fresh eggs\, pesticide-free vegetables\, and a variety of other goods made with love and locally sourced ingredients in Cedar Crest\, NM. \n\nHow can raising animals fit into regenerative farming? They are our GO-TO spot for local meat (they have the best sausages!). They are local leaders in how they are sustainability raising pigs and practicing regenerative farming. They divert TONS of food from going to landfills by feeding it to their pigs. We’ll hear from Ethan\, from Polk’s Folly\, about how farming that heals the land\, treats all living beings with respect and care\, and supports healthy vibrant communities from the soil up.\n  \nWhat will we be cooking?\n\nFallon will show us\, using Polk’s Folly ground pork\, how to crisp it up with lots of ginger\, garlic\, soy & fish sauce. This creates quick\, yet deeply flavorful crispy pork!\nWe’ll then quick pickle some onions & radishes to give it some acidic tang.\nWe’ll serve the pork & pickles veggies over rice noodles and then top it all off with lots of herbs and fresh greens. This way of eating is inspired by Vietnamese dishes – where there is very flavorful meat served with rice noodles\, herbs\, and & fresh greens. It is SO tasty and refreshing – and fun to eat!\n\n  \nPurchase your meat + veggies from Polk’s Folly!\nTheir farm stand in Cedar Crest is open Thursday – Sunday from 10-6. If you haven’t been yet\, it is worth the trip to east mountains! Their shop carries other cuts of local meat\, veggies\, baked good\, flours\, honeys & so much more. DESCRIPTION:What will we be cooking?\nWe’ll be making 3 recipes that will seriously level up your “condiment game”. With these flavor bombs\, suddenly a roasted potato or a fried egg can become restaurant-worthy good!\n\nPreserved Lemons: We’ll pack lemons with salt & spices\, let them ferment for about a month\, and then you’ll have a jar of gold. It’s like adding fresh lemon\, but 10x better. It has that same acidity plus a depth of umami from the fermentation. Plus\, you’ll never have to worry about having lemons on hand\, as this will last in the fridge for at least 6 months!\nDukkah: This Middle Eastern staple is made of toasted sesame seeds\, ground nuts & spices. It adds flavor and texture to any dish. My go-to has been frying an egg in a bed of dukkah\, so you get an egg with a crispy dukkah crust….oooooh yeah.\nChili Oil: We’ll simmer oil\, garlic\, sesame seeds\, and chili flakes until everything is lightly golden\, aromatic\, and just-crispy. This stuff is good on noodles\, roasted veggies\, eggs\, leftovers\, or really anything! Think hot sauce\, but more textured and luxurious. DESCRIPTION:In Collaboration with New Mexico Ferments! \nTheir mission is to cultivate wellness through producing high quality foods and beverages. They promote health by carefully crafting our products\, building relationships\, and supporting our local community. \nNew Mexico Ferments Kombucha is their main product\, and is a dryer\, non-alcoholic\, smooth and effervescent fermented green tea that is botanically spiked. They use organic and locally sourced ingredients if and when possible. They also produce kimchi & sauerkraut\, and work with local farmers and jam each jar with local goodness and flavor. \n  \n\nWhat will we be cooking?\n\nFallon will show us to make delicious savory\, umami-packed oatmeal. We’ll use a method of soaking steel cut oats in water (+ some kombucha!) to make them more digestible\, cook faster\, and help build a strong gut or microbiome. Then we’ll top our oats with NM Ferments kimchi or sauerkraut\, a poached egg (learn my easy technique!)\, and any extra veggies. This is the perfect breakfast to make in a big batch and have for the whole week!\nThen we’ll make a refreshing blended drink with NM Ferments ginger\, lemon\, cayenne kombucha + coconut water + ginger beer.
