grated on a box grater or food processor (or about 1 lb or one bunch of carrots)

Spice Blend

cumin

paprika
regular or smoked

more or less depending on spice preference
Instructions
In a small bowl, add raisins and lemon juice, and mix. Allow raisins to sit and plump up for about 5-10 minutes.
In a large bowl, add all other ingredients. Mix well.
Notes:
Once you have added all spices and mixed well, taste the dish. If you think it could use more spices, go for it!
You can make this dish in advance, and keep it in the fridge. The flavors actually get better the longer they sit together!
