What Makes Your Cooking Experience Unique:

LEARN: Mushrooms are trendy right now for some good reasons. They are delicious and sustainable! Did you know mushrooms have a small carbon footprint due to their low water needs and ability to grow in recycled materials? They’re also full of selenium and vitamin D, which are great for our immune systems. You’ll learn all about these fantastic fungi & how to use them in the kitchen!

THE RECIPE: You’ll learn how to prepare a flavorful and umami (savory) packed ramen, influenced by Japanese techniques and flavors. We’ll start with creating a dashi broth using a mix of New Mexico-grown dried mushrooms and kombu seaweed. Then we’ll whisk in miso paste, which adds a deep, salty flavor and creamy texture. The dish will get topped with a “jammy” egg, noodles, green onions, toasted sesame oil, and togorashi powder.

MEET THE FARMER: You’ll meet the expert mushroom farmer and fun-guy himself, Estevan Hernandez. With over 11 years of curiosity, research and experience cultivating fungi, Stavi prides himself in offering the healthiest and happiest mushrooms to his home state of New Mexico! Mycology is truly his passion, as he personally ensures the vitality of each mycelium block at his urban farm, NM Fungi. At the mushroom farm they grow several varieties of beautiful and tasty mushrooms!

What’s Included in the Ingredient Kit?

Recipe kit ingredients make enough for 4 servings 

Every participant will receive:

  • 2 ounces mixed dried mushrooms from NM Fungi
  • Kombu seaweed
  • Miso paste
  • Choice of soba or wheat ramen noodles
  • Toasted sesame oil 
  • Garlic
  • Togorashi powder

Recipe ingredients not included in box:

  • 4 eggs (or tofu for vegan)
  • Green onions
  • Any additional vegetables to be added

How it Works:

  • Price: $129 per household, which includes the class instruction, ingredient kit, shipping, and tax
  • Length: This experience is 90 minutes long, including time for cooking and team-building activities
  • Dietary Needs: We can accommodate some dietary restrictions in the ingredients kits, but will also provide suggestions for at-home substitutions 
  • Platform: Classes are held on Zoom (or we can use your desired platform)
  • Shipping: Classes will need to be booked at least 2 weeks in advance for adequate shipping time
