What the experience includes:

Our cooking classes are a one-of-a-kind experience. You’ll be cooking a meal all focused on the farm’s produce we are visiting. We bring all the equipment to have a fully functioning kitchen on a farm! At the end we will sit down to enjoy the meal we have all created.

 

What we’ll be cookin:

This class is all about mushrooms! Mushrooms have a whole slew of health benefits, from being anti-oxidant rich, immune-boosting, to potentially protecting against dementia. You’ll hear from NM Fungi owner, Estavan, about why mushrooms are nutrient-dense and great for the planet!

Our guest chef, Julian Scanlon will lead us through cooking multiple mushroom-focused recipes, including:

  • Mushroom risotto
  • How to pickle mushrooms
  • How to sear mushrooms
  • Medicinal mushroom stock

*Recipes can fit most dietary restrictions/allergies as long as you let us know before hand when checking out!

The Urban Mushroom Farm is nestled between Albuquerque’s Northeast Heights and Los Ranchos de Albuquerque. We offer a seasonal variety of gourmet and medicinal mushrooms, all while observing organic growing practices. Our mushrooms are grown in a temperature/humidity controlled indoor fruiting chamber and are picked fresh weekly!

Estevan Hernandez, ‘The Man Behind the Mushrooms’ – With over 10 years experience in cultivating fungi, Owner/Grower Stavi, prides himself in providing the healthiest and happiest mushrooms as he personally ensures the vitality of every block of mycelium. Mushrooms are truly his passion – it has been a dream come true to provide his home community with our fresh toadstools.

 

More about guest chef, Julian Scanlon:

Julian Scanlon is a passionate advocate for local food systems, highlighting human health and the health of the planet. Growing up in Italy from the ages of five to eighteen, he developed a deep appreciation for the unique flavors and nutritional value of food grown close to home. After returning to Albuquerque, New Mexico, where he was born, Julian turned to fermenting his own foods as a way to maintain a healthy diet after struggling with the lack of nutritionally dense foods and the overabundance of processed foods. Through experimentation and research, Julian discovered the numerous health benefits of fermentation and its positive effects on gut health. He is a skilled fermenter, creating delicious and healthy foods such as kombucha, sauerkraut, kimchi, vinegars, and more. Whether foraging for mushrooms or tending to his garden, Julian is dedicated to honoring nature’s gifts by helping to steward our ecosystems and human systems back to a place of health and homeostasis.

 

 

Who is this class for?

This class is for someone who wants a unique cooking experience. You’ll learn about local farms, sustainability, nutrition, and cooking techniques. Our recipes focus on teaching you how to utilize and cook with seasonal produce, but it doesn’t matter if you are a vegetarian, vegan, or carnivore – we all need to eat more plants!

Whether you’re a beginner or more seasoned cook, everyone can learn from our classes. We always have extra staff who can help with additional instruction if needed.

 

Our cancellation policy:

Cancellation: Should you need to cancel a reservation for this class, you will receive credit towards another class for any cancellation made four (4) days or more before the class date. Due to class prep-time and food purchases, cancellations made within three (3) business days of your class will not qualify for a refund or credit. The only exception is if you are sick (please stay home!), we can use our discretion. You must email us if you’d like to cancel and receive credit. Tickets are transferable, you can have someone come in your place, just please let us know.

Inclement weather: The Sprouting Kitchen reserves the right to cancel a class due to inclement weather or emergencies. If we need to cancel, we will notify you by email (and phone if possible) to offer you a credit towards another class or a full refund..

The price of your ticket includes:

  • We pay our farm partners for their time, knowledge, and land stewardship.
  • The equipment and time associated with setting up a pop-up kitchen on a farm
  • The cost of purchasing the freshest, regeneratively grown ingredients from local farmers
  • Recipe development to make sure our recipes highlight local ingredients AND taste incredible
