Get to know KALE!

When is it seasonal? Cooler seasons (spring, fall) but some farms grow it all year round!

Varieties: 

  • Curly kale: curly leafs with lots of surface area – great for a massaged salad!
  • Flat leaf/dinosaur/lacinato: flat, dark leaves, easy to chop up!
  • Red russian: Flat jagged leaves with a purple stem  

Nutrition: High in vitamin K, vitamin A, and folate. Generally referred to as a “dark leafy green” and everyone can use more leafy greens in their diet!

Culinary: So versatile and a mild flavor! Eat raw in salads, best if massaged to break down its stiff texture and bitter taste. Use it in a pesto or keep it simple and sauté in garlic & oil.
